here is my classic recipe for a basic vinaigrette.  this recipe can be adapted in many ways to use for any type of salad.  

i mix oil to vinegar in a three to one ratio.  three parts oil to one part vinegar.  the quantity can be adjusted to meet your needs.

usually i prepare, 3/4 cup oil to 1/4 cup white wine vinegar, but balsamic can be used as well.  i add salt and pepper to taste and blend in a Cuisinart professional prep mini blender. any type of blender can be used to combine the ingredients.

this is a handy recipe to keep on hand for everyday use.  the dressing can be stored in the refrigerator, and if it becomes solid, warm in the microwave and use as planned.

here i used the dressing on a Greek salad. to prepare a Greek salad, select a quantity of romaine lettuce, sliced red onions, black olives, chopped feta cheese, chopped tomatoes and chopped cucumbers.  mix and add vinaigrette.
