this salad is a lively blend of mixed greens, including Boston lettuce, romaine hearts, red leaf lettuce and arugula.  for a holiday twist, i included feta cheese crumbles and pomegranate seeds. the contrast of red and green in the salad gives a nice festive presentation.

i used my basic vinaigrette dressing this year, but have used another in past years.

here is a recipe for another salad dressing which is very flavorful:

in a glass measuring cup, whisk one minced shallot, with 3 tablespoons balsamic vinegar, 1 teaspoon Dijon mustard, salt and pepper.  combine 1/2 cup of olive oil slowing pouring into the cup to blend well.

for an added treat, toasted pecans or a substitute of crumbled goat cheese could be added.
