for an interesting twist on roasted potatoes, add sliced lemons to the potato wedges prior to roasting on a sheet pan. i used meyer lemons in a ratio of double the potatoes to half the amount of lemon slices. i used cooking spray on the sheet pan and the potatoes, seasoning as i would normally with ground pepper, parsley, and garlic and herb seasoning.
the potatoes had a slight lemon taste, which added a hint of freshness to the side dish. i think i would add zested lemon from the peel as well for a heightened level of flavor.
i roast the potatoes in a preheated 400 degree oven for about 30 to 45 minutes, depending on the size of the wedges. midway through the cooking process, i rotate the sheet pan in the oven and flip the potatoes, so all sizes brown evenly.
this is a good potato to serve with baked fish.
