chicken soup with an asian twist

cold weather allows me to sift through my soup recipes for meals that are filled with warmth and comfort. over the years i have collected many styles of soup, from creamed soups to chunky soups, even those that are made in a crock pot.  this asian chicken noodle soup is one of my favorites which i found online several years ago.  i can’t remember the website, but i have adapted the recipe to our tastes and enjoyment.

this recipe is low in calories and fat, but we find it very satisfying and comforting during the cold weather months.  some asian soups can be a bit spicy, and with my changes,i have made this one very mild.  if desired, the ginger and red pepper amounts could be increased to your taste.

to make the noodle soup:  

in a sauce pot on the stove top, combine 28 ounces of chicken broth with 8 ounces of water.  i have used homemade broth and cubed low sodium broth, and either is delicious.  bring these two ingredients to a boil.  add about 3 ounces of lo mein or soba noodles.  i use lo mein noodles.  if you prefer to break these in half, that is an option.  return the mixture to boiling and reduce the heat to low.  cover and simmer to cook the noodles for about 4-5 minutes.  next, stir in sliced sweet red pepper to taste, about 1/2 cup of sliced green onions, both the white and green stems, about 1 teaspoon of minced ginger, and crushed red pepper to taste.  i use less than 1/8 of a teaspoon.

add cooked white meat chicken that has been sliced into smaller bite-sized pieces.  i usually grill a chicken breast earlier in the day and add to the soup during the cooking process.  this is also a great recipe for a left over roasted chicken from the day before.  simmer these ingredients until warm, about 5 minutes or less.  

next, stir in about 3/4 cup of fresh pea pods that have had their ends trimmed.  simmer the soup again for about 1-2 minutes or until the pea pods are warmed, but still crisp.

ladle the soup into bowls and garnish with more red pepper if the guests enjoy a spicy version.  if you or your calorie watching friends avoid many noodles, this is a super tasty low-calorie meal.
