for a quick evening meal or party snack, i often turn to low-fat low carbohydrate quesadillas. these can be prepared a number of ways, as wraps, baked in the oven, or grilled in a pan on the stove.
this past week, i used deli turkey, a bit of cheese, with grilled onions and yellow peppers. to make this on the stove top: spread a very thin layer of margarine on one side of the tortilla. place in the skillet and warm, adding the ingredients of choice. this could be grilled chicken, shrimp or beef along with any grilled vegetables of choice. i have used mushrooms, onion, peppers, olives, with a small amount of cheese for melting. i use fontina, mozzarella, or Gruyère most often. not much is used.
place the toppings on one half of the tortilla shell, and fold over to cover. then, place a cover over the pan and allow the quesadilla to melt together. this will only take a couple of minutes. i usually flip the tortilla over to make certain both sides are browned.
remove from the pan and slice into wedges, serve with shredded lettuce, sour cream or salsa.
