living in the state of Michigan is spectacular for us, since we love baked, broiled, or grilled fish.  Michigan is surrounded by the largest freshwater system IN THE WORLD, known as the Great Lakes.  whitefish is a freshwater species and has exceptional fine flavor. it has been gathered since the early days of explorers in the state.

i prefer to buy fish local when possible for the best in flavor and taste.  i highly recommend whitefish for your next meal when you come to this state.  i equate that to having lobster when you visit Maine.

to make this recipe:  heat the broiler.  arrange sliced pineapple on a rimmed sheet pan.  i used four slices per fish fillet.  lay the whitefish fillet on the pineapple and season with salt and pepper. i also used a garlic and herb seasoning. broil for 8 minutes and then rotate the pan and broil for 4 more minutes. 

remove from the oven and add a pat of butter to the top of each piece of fish.  return to the broiler and broil for the last 5 minutes.  watch the pineapple, as the edges will brown slightly.

the fish can be served with a bright red and orange salsa.  i chopped orange and red peppers as a garnish and served over the fish with the pineapple slices.  if a starch is desired, serve with fluffy rice or couscous.

another option would be to serve with a lime dressing or a jalapeno salsa for zest.
