roasted sweet potatoes and red onions

for a change in sweet potato preparation, try this fast roasting technique.  roasting concentrates both flavor and sweetness of vegetables.  in this selection, i combined sweet potatoes and red onion slices.

fine cooking magazine presents master recipes that can be adapted to personal preferences, and this is where i came to this idea of roasting vegetables.  the technique can be adapted to winter squash, red potatoes, carrots, turnips, beets, or other vegetables.  

i simply sliced two peeled sweet potatoes and one large red onion on my cuisinart mandoline.  i placed them on a baking sheet and tossed them with about 2 tablespoons olive oil, some fine sea salt and ground pepper.

bake in the oven at 375 degrees for 20 minutes, and then turn over the vegetables and bake again for another 15 minutes.
