anytime of year, green apples are delicious at my home.  the granny smith apple has a hard, light green skin and keeps the apple shape perfectly when baking. this skin is responsible for the many health benefits of the fruit.  it is high in fiber, much more so that any type of red apple.

apples are rich in vitamin C and have many antioxidants which help to neutralize free radicals.

granny smith apples have about 80 calories per medium-sized apple and are an excellent low-calorie food.  they help to keep your hunger level down, taking a longer time to digest.

i simply baked these apples in a ceramic dish after slicing off the top, and scooping out the core.  i filled the core with a mixture of raisins, a bit of light brown sugar, and one tablespoon of cinnamon for four apples. surround the apples with about one to two cups of water.  once the apples baked at 350 degrees for 45 minutes, i removed them from the oven and added some chopped pecans to the top.

return the apples to the oven and bake until done, about ten more minutes.

enjoy with fat-free whipped topping, homemade vanilla ice cream or just as they are baked.
