eating well begins with increasing the amounts of fruit and vegetables in a daily food plan. sometimes it is difficult to incorporate a variety of tastes with many of the choices. i have found that zucchini can be prepared a number of different ways with great success. this is one of my recipes for zucchini boats or zu canoes. i alter the recipe for the summer and use olive oil and white wine vinegar with some chopped shallot as a dressing instead of baking the whole dish.
to make this recipe: trim the ends of one or two zucchini and remove the center pulp from the zucchini. save the pulp in a bowl and season with salt and pepper to taste.
microwave the zucchini for three to four minutes and place in an oven proof dish. add the following to the zucchini pulp: 1/2 cup chopped fresh tomatoes, 1/4 cup fresh mozzarella cut into small chunks, fresh basil, and about 1 tablespoon olive oil.
stuff the zucchini and bake at 350 degrees for 20 minutes. serve and enjoy as a perfect side dish with chicken, beef or even pasta.
