chow mein noodle cookies



this might be a familiar recipe to you, since it has been around for years and years.  i remember making these cookies twenty years ago.  there are several combinations of ingredients, but what ever combination is chosen, know that the recipe is easy, quick and comes together nicely.

to make the cookies:

melt 1 cup chocolate chips with 1 cup butterscotch chips in a double boiler over simmering water.  then add a choice of the following:

1 cup chopped peanuts, 1 cup chow mein noodles, 1/2 cup peanut butter, 1/2 cup marshmallows, or 1/2 cup coconut.  white chocolate can also be substituted for the milk or dark chocolate chips.

i used, milk chocolate chips, peanuts, chow mein noodles, and butterscotch chips. drop by 1 walnut size amounts onto a wax papered covered sheet pan.

chill in refrigerator for at least 30 minutes to set.  store in refrigerator if warmer indoor temperatures.  separate with waxed paper in a tin.

    Hey Karen, I use butterscotch chips and chopped peanuts, make nests and add the small jelly beans for Easter/spring. Sent batches to my three children last month for Easter. Always a big hit!
