do you love the lemon flavor of just about anything? i do. i love lemon cookies of all kinds and have many recipes for cookie bars, cookies crisps, and even minty lemon cookies. this recipe however comes from a friend in west virginia that has been around for at least 15 years.
it is surprisingly made from a lemon cake mix, mixed with a couple of other unique ingredients. making these cookies almost seems like cheating, since they are so easy to pull together. they might not be the best cookies ever, but they are certainly good enough to share this recipe.
to make the lemon bites:
mix one lemon cake mix, with 4 ounces of cool whip, and one egg. i use fat-free cool whip. the batter will be stiff. form into balls with a cookie scoop and roll in about 1/2 cup of confectioners sugar before placing on greased cookie sheets.
bake the cookies at 350 degrees for about 10 to 12 minutes. this recipe will make about 3-4 dozen cookies depending on the size of the cookie scoop.
