eggs Greenbrier



while living in Charleston, i have to admit that one of my favorite places to visit was the Greenbrier hotel.  we made many trips over the years, with even a special spa weekend as a perfect gift for turning 50 years old.  somehow, i forgot about my age and just had an amazing time on the grounds and relaxing in the soaking baths.

the food is nothing less than spectacular when dining in one of the many restaurants on the grounds.  this is one of their recipes that has been modified to be less caloric and more heart healthy.  when i feel like remembering the hills, i make this dish.

preheat the oven to 350 degrees.  coat a 1 1/2 quart baking dish with cooking spray.  cook 2 packages of frozen spinach and add to a skillet.  cook and dice four slices of bacon.

next, saute some minced garlic in the skillet, with the spinach, salt and pepper to taste. transfer the mixture to the baking dish, sprinkle lightly with Parmesan cheese, and pour 1 1/2 cups of egg beaters on top.  6 eggs could be substituted or use 3 eggs and the rest egg substitute.  place bacon on top and bake in the oven for 30 minutes.

the eggs will puff like a souffle, but will fall before serving.  each serving has only 4 fat grams and less than one hundred calories. 

i added a bit more Parmesan cheese to the top to make a brown crust.  options could also include:  add chopped onion, more cheese, or even more seasonings.
