poppy seed salad dressing

summer salads are back, and what is better than homemade salad dressing.  over the past couple of years, i have decided that any type of bottled salad dressing just can’t compare.  most dressings are so simple to make at home, and the difference in taste is truly remarkable.  plus, as a home cook, knowing what is in the mixture is so important.

one of my favorite summer salads has to be a mixed greens and strawberry salad.  the recipe comes from a northern Michigan winery.  of course, the salad pairs beautifully with a glass of wine! i will share the salad recipe tomorrow in my blog, but for today, here is the salad dressing.

to make the dressing:  combine the following ingredients in a bowl and whisk them very well to blend.  toss the dressing with the salad, and by adding some grilled chicken — the salad becomes a perfect summer meal.

1/2 cup low-fat mayonnaise, 1/4 cup unsweetened orange juice, 1 teaspoon poppy seeds, 1 teaspoon sugar
