leek and bacon pizza

here is another twist on the best pizza ever recipe that i posted on this blog april 10, 2013.  follow the directions in the recipe for the crust and the cheese selection, but use the following directions for the topping.

cook six slices of bacon either by baking in the oven or over medium heat on the stove top.  transfer the bacon to a paper-towel lined plate and drain excess grease.

clean very thoroughly one large leek and slice into long sections.  chop into smaller pieces and saute on the stove top with about one tablespoon of olive oil or reserved bacon fat.  this step will take about 12 minutes.

following the directions for the “best pizza ever” , top with cheese, next with the leeks and finally with the bacon.

bake in the preheated oven on 375 degrees for about 12 to 15 minutes.  allow the pizza to rest for about 2-4 minutes before slicing.
