pasta salad with homemade herbal dressing

i just can’t give up the idea that summer is over.  so, i made another summer salad just to finish out the season.  this pasta salad is a great one to serve at summer picnics or with all the favorite summertime grilled entrees.  i was able to use my homegrown green pepper and red onions, along with many fresh herbs from my garden.

the dressing could be used with a variety of salads.  it is flavorful and easy to prepare.

to make the salad:

combine two cups of cooked and drained pasta shells with 1/2 cup chopped green pepper, 2 sliced stalks of celery, and one small chopped red onion.

next, prepare the dressing:

mix 1/2 cup low fat mayonnaise with 1/4 cup light sour cream, 1 tablespoon of dill, parsley, and chives.  season with ground black pepper and salt.  then add, 4 to 5 tablespoons of buttermilk to acquire the correct consistency.

mix all together.  other options would be to add grilled chicken or bacon to the salad.
