one pan pumpkin bread

this is pumpkin season.  and, i highly recommend this bread recipe. i have made it for many years and always enjoy the flavor and texture of this bread.  if you are using a box mix, get rid of it today.  this bread is flavorful, tasty, and can be made in one bowl.

one of the most interesting ingredients in this recipe is Bisquick.  i use the heart smart Bisquick and the recipe outcome is delicious.

to make the bread: 

here are the ingredients that will be mixed together in one bowl.

1/3 cup vegetable oil, 1 cup canned pumpkin, 3 eggs, 2 1/3 cups Bisquick baking mix, 1 1/4 cups sugar, 2 teaspoons cinnamon, and raisins.  Mix  everything together except the raisins.  i have used both regular and golden raisins.  for this example, i used the golden.  once the mixture is well moistened, add the raisins and stir together.  some recipes will say to coat the raisins in flour before adding, as this helps to distribute them throughout the bread.

bake in a preheated 350 degree oven for 45 to 55 minutes.  test to make certain the bread is completely cooked.  cool before slicing.  i usually coat the loaf pan with cooking spray to help with the release.

delicious.  i warm a slice for breakfast and enjoy with a cup of tea.
