roasted Brussels sprouts with apples


fall is the perfect season to enjoy Brussels sprouts.  most people don’t really like the taste of this vegetable, but i have found that roasting them brings out a delicious flavor.  other recipes i have tried include sauteing them on the stove-top, which is another successful technique.

for this recipe, adding apple cider with diced apples adds a sweet-tart flavor profile that is equally attractive when serving on the plate.  this recipe comes together in a matter of minutes and is served to compliment chicken or pork.


to make the recipe:  first, preheat the oven to 375 degrees.  combine one or two chopped Fuji or gala apples with trimmed and quartered Brussels sprouts in a bowl.  prepare an 11 by 7 baking pan with spray cooking oil.  add the mixture with 2 tablespoons apple juice or apple cider.  add fresh thyme, salt and black pepper to taste.  bake for 25 minutes under tender.

the result is delicious and a very pleasing presentation.  this is a perfect fall dish.
