everyone loves mozzarella bites. here is a great baked recipe to avoid all of the frying usually required. i used low-fat light mozzarella sticks and simply sliced them into one inch pieces.
dip them in milk or egg beaters and milk, and roll in panko crumbs. place on a prepared baking sheet that has been sprayed with olive oil. season the bites with parsley flakes. bake in a 350 degree oven for 4 minutes and remove.
adjust the bites if they have melted a bit and flattened, and reshape with a flat icing spatula. return to the oven for another couple of minutes, to make certain they are heated through and warmed.
serve with warmed red tomato sauce or salsa. they are probably not as good as fried mozzarella bites, but they have far fewer calories. the panko crumbs give a great crunch to them too. they are worth a try.
