parmesan roasted acorn squash

here is a simple way to prepare acorn squash.  the squash will roast until very tender in about thirty minutes.  i used one acorn squash and sliced thin, after seeding and removing some of the outer skin.  heat the oven to 400 degrees.

on a baking sheet, toss the squash with about 3 tablespoons olive oil, salt, ground pepper and dried thyme.  sprinkle with Parmesan cheese.

roast in the pan until the squash is golden brown and tender about 30 minutes.  the squash can be served with chicken, turkey, fish, or beef.

typically, i prepare the squash by halving and seeding.  next, i pierce the squash with a fork and roast in a casserole dish for 30 minutes upside down with about 1/2 inch water around the squash. next, i reverse the squash and add about 2 tablespoon margarine and  brown sugar to the center of the squash and continue to bake for another 20 to 30 minutes depending on the size of the squash.

the roasting technique takes far less time and adds flavor to the squash without the sugar.
