roasted hedgehog potatoes take on a delicious flavor when prepared in this fashion. they can be seasoned with melted butter, salt, pepper, thyme or any other desired seasoning. they cook until tender and take far less baking time than prepared in the standard method.
this presentation was found in Victoria magazine, and featured in a tricolor potato medley. this gives an interesting presentation when served in a dish for passing on the dinner table.
i featured another recipe called fancy baked potatoes on my blog in may 2010. hedgehog potatoes are sometimes called hassleback potatoes.
for this recipe, preheat the oven to 425 degrees. line a rimmed baking sheet with aluminum foil. slice each potato crosswise at 1/8 inch intervals. do not cut through the potato completely. arrange the potatoes on the baking sheet and drizzle with 1/2 cup melted margarine. season as desired. bake until tender for approximately 30 minutes.
potatoes can be topped with any favorite toppings, such as sour cream, chives, or salsa.
