here is a different way to present a relish tray for the holidays.  i used fresh rosemary branches to form a wreath.  then, black olives, green olives, and small fresh mozzarella balls were layered on the wreath.  the wreath was seasoned with freshly ground mixed peppercorns.

i used a traditional Spode Christmas plate for serving, although I think a white plate or platter would show the wreath nicely, calling attention to the fresh rosemary branches.  The rosemary has a wonderful fragrance, adding to the presentation of the dish.

other options for this tray would include:  small grape tomatoes or feta cheese.
