this is a recipe i have saved from Tea Time magazine, November December 2009 issue.  it is a wonderful nut ball cookie recipe.  i made half of the recipe in the magazine, as the full recipe makes seven dozen cookies.  the cookies are amazing.  they are the best blend of soft and crumbly.  they have the perfect texture and form very easily.  this is a good cookie recipe.

to make the pecan balls:

preheat the oven to 275 degrees.  yes, only 275 degrees. this is probably the secret to the cookies.

line two baking sheets with parchment paper and set aside.

using an electric mixer, cream 1 cup unsalted butter with 2 1/2 tablespoons sugar, and 2 teaspoon vanilla extract.  add 2 cups of ground pecans, previously ground in a mini prep food processor.  add in 2 cups of flour.  using a cookie scoop, form into balls and place on the baking sheets.

bake for 20 minutes.  cookies with be light brown on the bottom when done.  they will remain pale in color on the top of the cookie.

remove from the oven and allow to cool for about 5 minutes.  roll the warm cookies in powdered sugar.  cool to room temperature and roll again in the sugar, until they are fully coated.

these ingredients will make 45 cookies.
