cheese and bacon potatoes

sometimes i search for something different to do with potatoes, especially when i don’t want to eat a whole potato.  this recipe allows for the option of just having one or two slices. i must admit these are very good and could be used for both a side dish or for a nice appetizer.  i found the recipe at allrecipes.com 

i think served with low-fat sour cream, these potatoes are very similar to a loaded baked potato.  and once again, if watching the calories, one or two of these slices would be enough for the taste and not all the calories.

i used two potatoes for my recipe.  preheat the oven to 350 degrees.  slice the potatoes into 1/2 inch slices.  prepare a baking sheet with a rack with cooking spray.  spray the potatoes as well.  the recipe said to coat with melted butter, but again the cooking spray is a nice substitute.

bake the potatoes at 350 for 45 minutes.  check along the way to see how they are browning based on your own oven temperature..  remove from the oven and top with shredded cooked bacon, shredded cheddar cheese, green onions or any toppings of your own choice. 

return to the oven to allow the cheese to melt.  this will only take a couple of minutes.  serve warm with sour cream as an appetizer or side dish.
