stuffed mushrooms with bacon and cheese


i found another stuffed mushrooms recipe, and this one is super quick and super easy.  this recipe is another one of those guy’s favorites for those tv sports parties.  this is a good dish for any football party, new year’s appetizer party or even the super bowl game party.

this one came from a Louisiana hometown cookbook.  it is tasty, and i will make this one again.


one carton of white mushrooms, cleaned and stems removed, about 1 cup or just a bit more of thinly shredded sharp cheddar cheese, about 1/2 cup of crumbled cooked bacon in a bag (found in the salad dressing section of the market), 3-4 chopped green onions, low fat mayonnaise


to make the appetizer:

mix all of the ingredients together, using just enough mayonnaise to hold them together.  any amount of the ingredients can be adjusted to taste.  it doesn’t take very much mayonnaise to hold the ingredients together, so start with a small amount and add some more as needed.  stuff the mushroom caps, place on a baking sheet and bake in a pre-heated oven at 350 degrees for about 12-15 minutes.  watch them in the oven, and adjust the cooking time.  the object is to have the cheese melted and the mushrooms hot.
