i found this recipe in eating well magazine — august/september 2006
for this dish, tomatoes are sliced in 1/4 inch slices. i used a baking dish to prepare the tomatoes, but they could also be prepared on a baking sheet. for the recipe, i would recommend selecting larger size tomatoes, rather than Roma tomatoes.
slice the tomatoes and place in the baking dish. top the tomatoes with Parmesan cheese, oregano, salt and pepper. top each tomato with a drizzle of olive oil. place in a 400 degree pre-heated oven. bake for 15 to 20 minutes until the tops are browned and the cheese is melted.
serve as a side dish or sandwich them between your favorite slices of bread.
