grilled chicken breasts will never be the same, after preparing in this manner. often this technique is used in restaurants for a great presentation and increased layer of delicious flavors. the chopped tomatoes and chives, which are added to the top of the chicken breasts provide a nice contrast in temperature. this recipe could be served with a side of potatoes, noodles, rice or even a side salad in the summertime.
to prepare the chicken: cook and brown four to six slices of bacon. microwave bacon could be used as well. next, slice one or two chicken breasts into thin slices and pound under plastic with a heavy metal pounder to flatten. brown them with one or two tablespoons olive oil in a deep skillet. this step will take around 8 minutes. when browned, add one to two tablespoons of barbecue sauce to the top of each, with a slice of cooked bacon. add shredded Monterey jack cheese to the top of each chicken breast.
broil in the oven until the cheese melts. the broiling step will last about four minutes. serve with chopped tomatoes, chopped chives or green onions and enjoy.
