Do you have children or other family members that dislike the idea of eating cauliflower? If you do, then this is the recipe for you. Ina Garten shared this technique in her most recently published cookbook, “Make it Ahead.” The cauliflower is mixed with Panko breadcrumbs and Parmesan cheese and then roasted in the oven.
One cauliflower head will provide a vegetable side dish for four dinner guests.
To make the recipe:
Preheat the oven to 425 degrees. Remove the leaves and separate the cauliflower into small heads. Slice them into smaller sections and place on a sheet pan. Drizzle with olive oil and sprinkle with salt and pepper. Roast for 15 minutes.
Remove from the oven and toss with Panko bread crumbs and olive oil. Roast for 10-15 more minutes until browned. Sprinkle with Parmesan and roast for another 1-2 minutes. Sprinkle with more shaved Parmesan, and serve very hot.
