For a lighter meatless meal, here is a great way to please your guests. Everyone loves to make their own baked potato special with a variety of toppings to choose from at a small buffet or bar.
For meat lovers, include chopped bacon or even barbecue chicken or pork.
I select Idaho potatoes that are about the same size and shape, baking them ahead for 1 to 1 1/2 hours after venting with a knife. I bake them on a sheet pan, and drizzle lightly with olive oil and a splash of fine sea salt. Cut the tops with an “X” when they are ready to serve. That will allow your guests to easily open them and fill with toppings. I offer, light sour cream, chopped green olives, chopped black olives, chopped red onion, chopped green onions, crispy bacon, shredded cheddar cheese, arugula, chopped red tomatoes, french fried onions, salsa, margarine, and salt/pepper.
