For years I have wanted to try this classic Italian pasta dish. Every Italian cookbook contains a recipe for pasta carbonara. When I did a simple web search, every notable food personality has their own recipe for this dish online. I chose to work with a recipe from http://www.damndelicious.net. With a few changes to adapt to our personal taste, the recipe performed perfectly. It has been one of the best pasta dishes that I have been able to re-create at home. With a few ingredients and this easy recipe which has a quick preparation time, spaghetti carbonara will become a classic “go-to” for everything from weeknight to entertaining with friends.
To make this classic dish: Gather these ingredients. 1/2 box spaghetti, 2 large eggs, 3/4 cup shaved Parmesan, 8 slices of bacon, 1/2 teaspoon minced garlic, kosher salt and freshly ground pepper, and 2 tablespoons parsley flakes.
Prepare the bacon by baking in the oven at 350 degrees for 20 minutes until crispy. Crumble and set aside, reserving 2 tablespoons of the bacon fat.
Boil the pasta per package directions about 8 minutes. Reserve 1 cup of pasta water, and drain the pasta.
Next, in a small bowl, mix the eggs and the Parmesan cheese. In a saute pan, add the bacon fat and the garlic. Add the crumbled bacon. Next, add the egg mixture and cook while stirring with a spatula. Add the pasta next, and season with salt and pepper. Add about 1/4 cup of pasta water to thin and allow the pasta to move freely in the pan. If needed, add extra pasta water. Serve right after preparing, topping with parsley flakes.
