We have been celebrating the coming of St. Patrick’s Day for several days.  Last week,  I surprised my husband with a minty milk shake.  We do not have milk shakes very often, so this was a welcome surprise.

I used 3-4 medium scoops of vanilla frozen yogurt per shake, with 1 1/2 cups of fat-free milk.  I added 1/2 cup of mint syrup (see below) with 1 teaspoon peppermint extract.  I used liquid green food color to give the shakes the shamrock green color.  It only took 4 drops. These ingredients mixed in the blender so quickly.   I topped the shakes with fat-free Redi-Whip topping from the can.

To make the simple syrup to use in these shakes, boil these ingredients together.  1 cup of sugar, 1/2 cup water, and 1 tablespoon corn syrup. To flavor the syrup, I added 1 teaspoon peppermint extract. The mixture boils until it comes up to 230 degrees F on a candy thermometer.  This is when the syrup changes from cloudy to clear in color. This syrup could be used for many occasions or milk shakes, when selecting other flavored extracts. I keep it in the refrigerator for use with other specialty drinks.  The mixture needs to be cool before adding to any milk shake.

Serve the drinks in pretty clear glasses so the bright green color of the shakes can be enjoyed.  Such fun!
