Over the past five years, I have shared a number of breakfast ideas. French toast happens to be one of my favorites for a special meal to serve for family or friends. This is a great recipe that I use over and over, and have adapted it to make it one of my classic breakfast meals.
I use a variety of extracts within the recipe to change the taste, substituting almond extract, orange extract, maple or even a variety of gourmet vanilla extracts. Each combination gives a unique taste to the dish.
To make this recipe: In a large bowl, combine these ingredients–1 cup milk , 1/4 teaspoon salt, 2 eggs and 1/4 cup egg beaters, 1/2 teaspoon cinnamon, 1 teaspoon vanilla extract, and 1 teaspoon of one of the above choices of extracts, and 1 tablespoon brown sugar. Mix very well.
Cut ciabatta rolls into 8 to 10 slices. Dip well to coat into the bowl of batter. Using a griddle, cook until slightly browned. Serve with syrup, powdered sugar, and even whipped cream. Top with chopped nuts if desired.
Serve with sliced fruit or breakfast meats if desired. This is a wonderful holiday breakfast. Fast and Easy.
