I have been truly enjoying my new cookbook by Jessica Seinfeld. Food Swings offers this recipe which was totally delicious. I did broil my piece of salmon longer than she recommended in her recipe. I also adapted her ingredients, but used the same combination. To be specific, I used low sodium soy sauce — I used orange juice concentrate instead of simply the juice, and I used ground ginger instead of fresh ginger.

The ginger soy sauce mixture was amazing.  We will certainly enjoy this recipe again throughout the year. I just had to share this technique with you, as the flavor combination is just perfect for a summer salmon entrée.

Suggestions for serving could be with a summer salad, vegetable mixtures or potatoes.

To make the recipe, gather these ingredients: 1/3 cup light soy sauce, 2 tablespoons honey, 2 tablespoons orange juice concentrate, 1 teaspoon ground ginger. Mix together and pour over the salmon.  Cover and refrigerate for at least 30 minutes prior to cooking.

If there is not enough time in advance to marinate, simply pour the mixture over the salmon prior to broiling.

When ready to begin dinner preparation, place the salmon on a foil-lined baking sheet and broil for 11 minutes.  I basted the salmon twice in the marinade during the cooking time.  Next, I removed the salmon from the oven, sliced into serving portions and returned to the oven.

Bake for 6 minutes at 350 degrees.  Delicious!
