English muffin pizzas

As a flashback from the past, I remember making these mini pizzas for my young family when a quick after school snack was requested.  I remember how delicious they were, so decided to try them again for a quick on-the-go meal.

Use your favorite English muffins, slicing them down the center.  Toast the muffins before the remaining steps. Prepare a baking sheet by covering with aluminum foil.

To make the pizzas: Add a light layer of concentrated tomato paste on top of the muffins.  Top with your favorite melting cheese or cheeses and pepperoni (if desired). I used chopped red onion and sesame seeds.  Sprinkle with pizza seasoning and Parmesan cheese if desired. Other chopped toppings could include: green onions, green pepper, or chopped olives.

Bake or broil until browned and the cheese is melted.  Serve warm.  This is a super easy and very tasty quick pizza bread snack. For a fast weeknight dinner, add a side salad and enjoy!
