Bacon and tomato frittata

Summer brunches are a perfect way to entertain.  Guests love to enjoy the morning sunshine and a quick and light summer meal.  Frittatas are a easy way to serve a crowd without having to stand over the stove preparing individual egg dishes.

This bacon and tomato frittata is very tasty and one that is perfect for a summer brunch. To make this recipe, gather these ingredients:  4 eggs, 1/3 cup egg whites, small grape tomatoes–chopped, 4 slices of crumbled cooked bacon, fresh basil, 1 cup mozzarella cheese for the dish and 1/2 cup mozzarella cheese on top along with dried parsley flakes

Heat the oven to 350 degrees, Whisk the eggs, in a bowl.  Add chopped tomatoes, bacon, basil, and cheese.  Mix well.  Place into a glass pie dish sprayed with PAM. Bake for 25 minutes and then add additional cheese if desired. I topped with additional chopped basil and dried parsley flakes.  Bake another 5 minutes until done. Slice and serve with fresh fruit, a breakfast muffin or a granola parfait.
