College football season is underway and everyone needs a new game day snack to serve. I tried using an old standby–Pepperidge Farm’s Puff Pastry sheets to make a delicious and easy pizza type snack.
To make this snack, preheat the oven to 400 degrees.
First, I thawed the puff pastry sheet on parchment paper for about 25 minutes. Next, I lightly rolled out the sheet to make it a bit larger on the cook sheet. Next, I scored around the sheet, approximately 1/2 inch from the border with a sharp knife.
On the first layer, I used shredded Parmesan cheese to cover within the scored area. Next, I sprinkled chopped green onions and small-sized pepperoni. I also added a small amount of drained Ro-Tel tomatoes. Then, I sprinkled the area with small pieces of fresh mozzarella cheese. And, finished the pizza snack with fresh thyme.
Bake in the oven for 25 minutes and then prior to serving, top with sliced fresh basil and chopped fresh parsley from the garden. The pizza snack is easy to cut into squares of any size and is tasty. Such a fun new way to serve an appetizer pizza.
A variety of toppings could be used, but the key is not to overload as the thin flaky crust is the highlight of this recipe. This is a tasty game day snack and one that will be enjoyed by nearly everyone.
