Cranberry Fluff salad

Anytime of year is a great time for cranberry salad.  One of my favorite salads for the holidays is also perfect with cranberries saved from the freezer during the spring and summer seasons.  To make this salad, I use one bag/12 ounces of cranberries, 3/4 cup sugar, 8 ounces crushed pineapple-drained, 1 cup sliced red grapes, 1 cup chopped pecans, 2 cups small marshmallows, and 8 ounces Cool Whip

To prepare the salad:  I chop the cranberries in my mini food processor.  Next, I mix in the sugar.  At this point, I store the salad in the refrigerator for the afternoon or even overnight.

Later, I finish the salad preparation.  I add the drained pineapple, grapes and pecans.  Mix very well and then add the small marshmallows.

Adding the Cool Whip is the final step. Mix until completely incorporated and then serve immediately.  The salad can be kept in the refrigerator for a couple of hours prior to serving.

One of my favorite salads to enjoy Spring through Winter, as it compliments chicken, fish or even summer grilled burgers. During the holiday season, I serve this salad with our Christmas meal or Thanksgiving turkey.  Yummy.
