Are you looking for a great tasting pizza option that happens to be gluten free? I found so many varieties of this recipe online, but put together this combination as my favorite to serve for a quick vegetarian option for a pizza dinner. Served with a side salad, this has become one of our favorites in recent months.
Depending on the number of servings, this recipe can be adjusted based on the number of peppers needed. I used 2 green peppers, salt, pepper, olive oil, tomato paste or tomato sauce, shredded mozzarella cheese, Parmesan cheese, sliced green olives, mini tomatoes sliced, dried basil, dried chives, chopped green pepper
First, I cleaned the peppers and sliced them in half. I drizzle them with a very light amount of olive oil and bake them in the oven for about 5-6 minutes. Take them out, and spread small amount of tomato paste or tomato sauce in the cavity of each pepper. Then, fill with the shredded cheese and top with the other ingredients as desired. Sprinkle with seasonings as desired.
Bake the pepper for about 15 minutes or less until the cheese is melted and the pepper is beginning to soften. These are delicious and one is perfect with a side salad for a nice vegetarian gluten free pizza dinner.
