So many ideas are out there for Toast Tuesday, but here is one that I have tried recently and absolutely love the taste and ease of preparation.
I start this recipe by first preparing the asparagus and roasting at 350 degrees for 15 minutes in the oven on a half-sheet pan with a spray of Pam Olive oil and a bit of sea salt. Next, I toast a slice of ciabatta bread and place on the sheet pan and top with the roasted asparagus. I sprinkle with shaved Parmesan cheese and ground black pepper, and return to the oven on bake for 3-4 minutes to melt the cheese.
During that heating cycle, I prepare my egg in a skillet on the cook top. I use an egg ring to achieve the heart shape design. When the cheese is melted on the toast, I add the egg and serve. Such a yummy lunch served with fresh fruit.
