Are you looking for a bit of a twist for your Cinco de Mayo party? Here is an interesting recipe that I tried and would be perfect for the celebration.  This one uses frozen waffle fries instead of nacho chips.  It is a hearty recipe and one that the men in your life would really enjoy.  Seems like recipes like this go very quickly when placed on the appetizer table.  The cast iron skillet makes this a one pan recipe and looks great when serving up the skillet as well.  The cast iron keeps them warm between sampling and the taste profile is over the top.

To make this recipe:  Bake the waffle fries according to directions on a sheet pan.  Add them to the cast iron skillet and top with cooked crumbled bacon, chopped green onions, sliced black olives, sliced grape tomatoes, and shredded cheddar cheese.

Return to the oven and bake for about 6-8 minutes until the cheese has melted.

Serve with sour cream and salsa on the side.
